Signature Collection
A curated offering of our most expressive and exclusive coffees—sourced in close partnership with exceptional producers. Each lot is a signature in itself: distinct, memorable, and a true reflection of origin, skill, and care at the highest level.

Due to the exclusivity, high cost and small amount of green available, we roast and fulfill orders for this coffee on a schedule. We roast Ombligon once every 7 days, so expect this coffee to take just a bit longer to ship. If you ordered any other coffees, they will wait and ship with the Nestor Lasso Ombligon.

Grab our Golden Bean Medal winning coffee. This is the only coffee we entered in to the competition in 2024, and we were blessed to come away with a silver medal in the filter category, a bronze medal in the espresso category, and a bronze medal in the milk/espresso category! We are so stoked that this coffee performed well at this year’s competition and want to share what we have left with you!

About this coffee: At just 24 and 26, Nestor and Adrian Lasso are among the youngest innovators in the coffee industry. Along with fellow coffee farmer Jhoan Vergara, they established El Diviso, a farm where passion meets experimentation. While their parents focused primarily on commodity coffee, these three visionary producers have shifted to specialty coffee production, drawn not only by its potential for economic growth but also by their love for the craft and pushing the boundaries of coffee processing.

A few years ago, Nestor and Adrian took over their family farm with a commitment to innovation and outstanding quality. This dedication shines through their unique processing methods and coffee varietals, such as this somewhat lesser-known Ombligon variety. Ombligon, a Spanish term meaning “belly button,” is thought to be a natural mutation of Ethiopian origin and while it is still a relatively rare varietal, has recently gained recognition on the global stage.

The process begins by carefully selecting darker cherries with a brix level of 24-26°. Any floaters are removed, and the cherries are washed with a 5% alcohol solution to eliminate impurities and unwanted bacteria. The cherries then undergo an initial 48-hour oxygen-exposed fermentation, followed by a 12-hour resting period. After resting, they are placed in open bags for an additional 60 hours of fermentation. The bags are opened periodically to regulate the temperature between 30°C and 40°C. After the 60 hours, the bags are left open briefly to raise the temperature before washing.

Next, the cherries are transferred to a plastic tank for 24 hours of anaerobic fermentation with musto recirculation to enhance flavor complexity.

The fermentation process is halted by washing the cherries with hot water at 50°C. This quenching method rapidly cools the cherries, helping to fixate the volatile compounds released during fermentation. The combination of hot and cold water opens the bean’s pores and locks in the flavors.

The cherries are first sun-dried naturally, followed by a final drying stage in a stainless steel dehumidifier for 70 hours at 35°C to achieve optimal moisture levels.

By combining tradition, innovation, and passion, the team at El Diviso is producing exceptional coffees that not only stand out in terms of quality but also help inspire other producers to see coffee as the noble product it truly is.

Our Approach to Transparency

At Euphoria, transparency begins with relationships. We believe that great coffee is rooted in mutual trust, respect, and shared commitment—long before it ever reaches your cup.

Instead of focusing solely on numbers or certifications, we prioritize long-standing partnerships with the farmers who grow our coffee. Some of these relationships have been years in the making, built through consistent communication, shared goals, and genuine care for one another’s success.

We believe the length of these relationships is one of the most meaningful indicators of transparency. A farmer would not choose to work with us year after year if we were cutting corners, negotiating unfairly, or treating their work as anything less than the craft it is. When both sides continue to return, it’s because the partnership is healthy, respectful, and mutually beneficial.

For some of our newer relationships, the foundation is the same: direct access and open communication are non-negotiable. We do not pursue sourcing situations where we can’t talk directly with the people producing the coffee, nor do we enter relationships that don’t have the potential to grow into something long-term. Our goal is always consistency, trust, and shared success, not one-time transactions.

Whenever possible, we visit our producing partners face to face. Sitting down together, walking their farms, and experiencing their work firsthand is invaluable. These moments deepen our connection and help ensure that our sourcing practices reflect our values in real, tangible ways.

When you enjoy our coffee, you’re supporting real people, real families, and real histories, thoughtfully connected across the world. That’s the heart of what we do, and that’s the kind of transparency we’re proud to stand behind.
